Bizinka started with a loaf of bread.
Kosta and Olena left Kharkiv with their three children after the war reached the city in 2022. They spent time in Latvia, then Italy, then France, and arrived in Union City that July.
They could not find bread they liked at the store, so they baked their own. Friends tried it and asked why they were not selling it. That question turned into preorders, and preorders turned into a case downtown.
The name comes from Olena’s grandmother. So does most of the sensibility: European baking, a lighter hand with sugar, and the idea that a good cake should taste like more than one thing.
